Chef's Note

2 slices whole grain bread
3 slices bacon
2 leaves romaine lettuce
1 medium tomato
1/4 whole avocado
4 oz deli turkey breast
1 tablespoon light mayonnaise
1 teaspoon dijon mustard
1/4 teaspoon black pepper
1 medium apple

Place 3 slices of bacon in a skillet over medium heat and cook for 8-10 minutes, turning occasionally, until crispy. Transfer to a paper towel-lined plate to drain excess grease.

While the bacon cooks, wash and dry the lettuce leaves, and slice the tomato into 4 thin slices.

Slice 1/4 of an avocado into thin pieces.

In a small bowl, mix 1 tablespoon of light mayonnaise with 1 teaspoon of dijon mustard.

Toast 2 slices of whole grain bread until golden brown.

Spread the mayo-mustard mixture evenly on both slices of toasted bread.

On one slice of bread, layer 2 lettuce leaves, 4 tomato slices, 3 slices of cooked bacon, 4 oz of turkey breast, and the avocado slices.

Sprinkle 1/4 teaspoon of black pepper over the sandwich fillings.

Top with the second slice of bread, cut the sandwich diagonally, and serve with 1 medium apple on the side.
