Chef's Note

The unbroken layer of floating chicken fat acts as a physical barrier against evaporative cooling, keeping the broth under the oil cap at near-boiling temperatures (95°C+) for over 15 minutes without an external burner. Remember to warm your serving bowls first so conduction doesn't steal your broth's thermal energy!

Ingredients
  • 1 whole Whole stewing chicken (split, with skin and fat attached)

  • 1.5 lbs Pork neck bones or trotters (for gelatin body)

  • 14 cups Water

  • 2 inches Fresh ginger (sliced into coins)

  • 4 stalks Scallions (cut into 2-inch pieces)

  • 3 tbsp Shaoxing rice wine

  • 1/2 cup Rendered yellow chicken fat (schmaltz) or lard

  • 8 oz Pork tenderloin or ribeye (sliced paper-thin)

  • 8 oz Chicken breast (sliced paper-thin)

  • 4 whole Fresh quail eggs (or pasteurized chicken egg yolks)

  • 16 oz Fresh Yunnan-style rice noodles (or cooked thick rice vermicelli)

  • 1 cup Fresh shiitake mushrooms (thinly sliced)

  • 1/2 cup Dried wood ear mushrooms (rehydrated and sliced)

  • 1 cup Crispy fried tofu skin or pork cracklings

  • 1 cup Fresh chives or garlic chives (cut into 2-inch batons)

  • 1/2 cup Cilantro leaves and finely chopped scallions

  • to taste pinch White pepper and salt

Instructions
  • 1

Prepare the stock: In a large stockpot, cover chicken and pork bones with cold water. Bring to a boil for 5 minutes, then drain and rinse thoroughly under cold running water to remove impurities.

  • 2

Return bones to clean pot with 14 cups fresh water, ginger, scallion pieces, and Shaoxing wine. Bring to a boil, then lower heat to maintain a steady simmer for 2 hours until the liquid is deeply fragrant, gelatinous, and reduced to approximately 8-10 cups.

  • 3

Skim any rendered yellow chicken oil from the broth surface and set it aside in a warm small saucepan. Add additional rendered chicken fat or lard to make at least 1/2 cup total oil. Strain the broth through a fine-mesh sieve, season generously with salt and white pepper, and keep covered over medium heat.

  • 4

Pre-heat serving vessels: Place 4 heavy ceramic or stoneware soup bowls into a 200°F (95°C) oven for 10 minutes (or fill with boiling water for 5 minutes then dump out) so they retain heat.

  • 5

Prepare raw ingredients: Slice meats paper-thin (partially freeze meat for 20 minutes beforehand for easier thin slicing). Arrange sliced meats, quail eggs, mushrooms, tofu skin, and herbs cleanly on individual serving platters for each diner.

  • 6

Cook rice noodles in boiling water according to package instructions, rinse in lukewarm water, drain well, and portion onto separate plates.

  • 7

Assemble lipid seal: Ladle scalding hot broth (98°C/208°F) evenly into the warm ceramic bowls. Immediately spoon 2 tablespoons of hot rendered chicken oil over each bowl to form a thick, continuous lipid cap across the liquid surface.

  • 8

Serve immediately at the table. Guide diners to add ingredients in strict thermodynamic order: first slide in raw thin-sliced meats and quail egg, stirring gently into the hot broth beneath the oil layer for 30 seconds; next add mushrooms and tofu skin; then stir in pre-cooked rice noodles; finish with fresh chives and cilantro.
