Chef's Note
Don't skip the ice-water bath! The 15-minute cold-water bleed is essential to wash away the bitter intybin compounds, while the thermal shock ensures the radicchio maintains enough structure to sear beautifully without turning mushy.

Ingredients
1 large head Radicchio di Chioggia or Treviso
1.25 lbs Pork Tenderloin
3 oz Pancetta, diced
2 tbsp Olive Oil
2 cloves Garlic, thinly sliced
3 tbsp Aged Balsamic Vinegar
1 tbsp Honey
1 sprig Fresh Rosemary, finely chopped
1.5 tsp Kosher Salt
1/2 tsp Black Pepper
1/4 cup Toasted Walnuts, chopped
1/4 cup Parmesan Cheese, shaved
Instructions
- 1
Cut the radicchio head into 8 wedges, keeping the core intact so the leaves hold together during cooking.
- 2
Submerge the radicchio wedges in a large bowl of ice water for 15 minutes. This process leaches out the water-soluble bitter compounds (intybin) while the thermal shock contracts the cell walls to maximize crispness.
- 3
Remove the radicchio from the ice bath, drain thoroughly, and pat completely dry with paper towels.
- 4
Trim the pork tenderloin and cut into 1-inch thick medallions. Pat dry and season both sides with salt, black pepper, and chopped rosemary.
- 5
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Sear the pork medallions for 3 to 4 minutes per side until golden brown and cooked to an internal temperature of 145 degrees F. Transfer to a plate and tent with foil to rest.
- 6
Reduce the skillet heat to medium. Add the remaining olive oil and the diced pancetta. Cook until the pancetta is crisp and golden, about 4 to 5 minutes. Use a slotted spoon to transfer the pancetta to the plate with the pork, leaving the rendered fat in the skillet.
- 7
Add the sliced garlic to the skillet and cook for 1 minute until fragrant. Add the dried radicchio wedges in a single layer. Sear for 2 minutes per side until the edges are caramelized but the center remains slightly firm.
- 8
Drizzle the balsamic vinegar and honey over the radicchio in the skillet. Toss gently for 1 minute to coat and let the glaze reduce slightly.
- 9
Plate the warm balsamic-glazed radicchio alongside the rested pork medallions. Spoon the remaining pan glaze and crispy pancetta over the top. Garnish with toasted walnuts and shaved Parmesan cheese.
