Chef's Note
Toasting raw oats in a skillet rapidly triggers the Maillard reaction for instant bakery-level crunch.

Ingredients
4 cups plain whole milk Greek yogurt
1.5 cups raw rolled oats
0.5 cup raw sliced almonds
1 tbsp unsalted butter
5 tbsp honey
1.5 tsp vanilla extract
2 cups fresh strawberries
1 cup fresh blueberries
Instructions
- 1
Wash 2 cups of fresh strawberries and 1 cup of fresh blueberries. Hull the strawberries and slice them into bite-sized pieces. Set all berries aside.
- 2
Place a dry skillet over medium heat. Add 1.5 cups of raw rolled oats and 0.5 cup of raw sliced almonds. Toast, stirring constantly, for 3 minutes until the oats are fragrant and lightly golden.
- 3
Reduce the heat to low. Add 1 tbsp of unsalted butter and 2 tbsp of honey to the skillet. Stir quickly for 1 minute to evenly coat the oats and almonds, then immediately transfer the mixture to a plate to cool and crisp up.
- 4
In a medium bowl, combine 4 cups of plain whole milk Greek yogurt, 1.5 tsp of vanilla extract, and 2 tbsp of honey. Whisk together until smooth and creamy.
- 5
To assemble, set out 5 glasses or bowls. For a kid-friendly presentation, you can keep ingredients in separate piles, or layer them: start with 2 tbsp of the cooled toasted oat crunch at the bottom of each glass, followed by 1/3 cup of the sweetened vanilla yogurt, and a generous handful of the mixed berries.
- 6
Repeat the layers once more, finishing with a final layer of berries and a drizzle of the remaining 1 tbsp of honey divided evenly among the 5 parfaits.
