Chef's Note

Store your seared meats and cooked veggies in separate containers if you're saving leftovers, so the meat's crispy crust doesn't get soggy!

Ingredients
  • 250 g raw turkey sausage links

  • 400 g potato gnocchi

  • 1 large red bell pepper

  • 2 cloves garlic

  • 1 tsp dried oregano

  • 20 g Parmesan cheese

Instructions
  • 1

Bring a medium pot of salted water (about 1.5 liters) to a boil on the stovetop.

  • 2

While waiting for the water to boil, wash and slice 1 large red bell pepper into thin strips. Peel and mince 2 garlic cloves. Slice 250g of raw turkey sausage links into 1-cm thick rounds.

  • 3

Once the water is boiling, add 400g of potato gnocchi and cook for 2 to 3 minutes, or until they float to the surface. Use a slotted spoon to transfer the gnocchi to a plate and pat them dry with a paper towel.

  • 4

Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the 250g of sliced turkey sausage and cook for 4 to 5 minutes, turning occasionally, until browned and cooked through. Transfer the sausage to a clean plate.

  • 5

In the same skillet, add another 1 tbsp of olive oil. Add the sliced red bell pepper and cook for 3 minutes until slightly softened. Stir in the minced garlic and 1 tsp of dried oregano, cooking for 30 seconds until fragrant.

  • 6

Add the cooked gnocchi and the seared turkey sausage back into the skillet. Sauté everything together for 3 to 4 minutes, stirring occasionally, until the gnocchi gets slightly golden and crisp on the edges. Season with salt and black pepper to taste.

  • 7

Divide the gnocchi, sausage, and peppers between two plates. Grate 20g of Parmesan cheese over the top and serve immediately.
