Chef's Note
This recipe perfectly demonstrates 'texture mimicry' from the blog post. By ricing and thoroughly squeezing the cauliflower, we match the exact density of ground chicken. The ultra-crispy panko coating mimics the familiar crunch of store-bought nuggets, bypassing sensory aversion and creating a seamless bridge to a new vegetable.

Ingredients
1 lb Ground chicken breast
1.5 cups Cauliflower florets
1 large Egg
1/4 cup Fine plain breadcrumbs
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2 tsp Sea salt
1.5 cups Panko breadcrumbs
to taste spritzes Olive oil spray
Instructions
- 1
Steam the cauliflower florets for 5-6 minutes until completely tender. Let cool slightly.
- 2
Place the steamed cauliflower in a food processor and pulse until it reaches a fine, rice-like consistency.
- 3
Transfer the riced cauliflower to a clean kitchen towel or cheesecloth. Twist and squeeze firmly to extract as much liquid as possible. This step is critical to prevent a mushy interior.
- 4
In a large mixing bowl, combine the squeezed cauliflower, ground chicken, egg, fine breadcrumbs, garlic powder, onion powder, and sea salt. Mix thoroughly with your hands until uniform.
- 5
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- 6
Place the panko breadcrumbs in a shallow bowl or pie dish.
- 7
Scoop about 1.5 tablespoons of the chicken-cauliflower mixture, shape it into a classic nugget shape, and roll it in the panko breadcrumbs, pressing gently so the crumbs adhere to all sides.
- 8
Place the coated nuggets on the prepared baking sheet. Spray the tops generously with olive oil spray to ensure a golden, crispy finish.
- 9
Bake for 10 minutes, flip the nuggets over, spray the other side with olive oil spray, and bake for an additional 8-10 minutes until golden brown and the internal temperature reaches 165°F (74°C).
- 10
Allow to cool for 2 minutes before serving with your child's favorite accepted dipping sauce.
