Chef's Note
The cold refrigerator rest is a crucial step; it dries out the surface of the dough, allowing the alkaline lye bath to react cleanly with the surface proteins without making the dough soggy, yielding that perfect glossy, mahogany finish.

Ingredients
4 cups Bread flour
2.25 tsp Active dry yeast
1.25 cups Warm water (110°F)
3 tbsp Unsalted butter, softened
1 tsp Granulated sugar
2 tsp Fine sea salt
30 g Food-grade lye micropearls
1 liter Cold water (for lye bath)
1 tbsp Coarse pretzel salt
1.5 lbs Ground beef (80/20)
1 cup Obatzda (Bavarian cheese spread)
1 medium Red onion, thinly sliced
4 tbsp Sweet German mustard
2 cups Fresh arugula
Instructions
- 1
In a stand mixer bowl, dissolve yeast and sugar in warm water. Let stand for 5-10 minutes until foamy.
- 2
Add bread flour, fine sea salt, and softened butter. Knead with the dough hook on medium-low speed for 8-10 minutes until smooth and elastic.
- 3
Place dough in a lightly greased bowl, cover, and let rise at room temperature for 60 minutes, or until doubled in size.
- 4
Divide the dough into 4 equal portions (approx. 150g each). Shape each into a tight, smooth ball. Place on a parchment-lined baking sheet, cover loosely, and let rest for 15 minutes.
- 5
Transfer the uncovered buns to the refrigerator for 15-20 minutes. This dries out the surface and helps them hold their shape during the dip.
- 6
Safety First: Put on protective gloves and safety goggles. In a heavy glass or stainless steel bowl (never aluminum), slowly add the lye micropearls to the cold water. Stir gently with a stainless steel spoon until dissolved.
- 7
Carefully submerge each chilled bun into the lye solution for 15-20 seconds per side. Use a stainless steel slotted spoon to transfer them back to the parchment-lined baking sheet.
- 8
Using a razor blade or very sharp knife, score an 'X' on top of each bun. Immediately sprinkle with coarse pretzel salt.
- 9
Bake in an oven preheated to 425°F (218°C) for 15-18 minutes until a deep, glossy mahogany brown. Transfer to a wire rack to cool completely.
- 10
Form the ground beef into 4 burger patties. Season generously with salt and pepper. Sear in a hot cast-iron skillet for 3-4 minutes per side for medium doneness.
- 11
Slice the fresh pretzel buns in half. Spread a generous layer of Obatzda on the bottom halves, top with arugula, a beef patty, red onion slices, a drizzle of sweet German mustard, and the top bun.
