Ingredients
  • 300 g frozen edamame in pods

  • 30 ml mirin

  • 15 ml soy sauce

  • 1 clove garlic

  • 5 g fresh ginger

  • 5 ml toasted sesame oil

  • 5 g toasted sesame seeds

Instructions
  • 1

Peel and finely grate 5 g of fresh ginger and 1 clove of garlic.

  • 2

In a small bowl, whisk together 30 ml of mirin, 15 ml of soy sauce, the grated ginger, and the grated garlic.

  • 3

Place a wide skillet over medium-high heat. Add 300 g of frozen edamame in pods and 60 ml of water. Cover immediately with a tight-fitting lid and steam for 3 minutes until the pods are vibrant green.

  • 4

Remove the lid and cook for 1 minute to allow any remaining surface moisture on the edamame to evaporate completely.

  • 5

Reduce the heat to medium. Pour the mirin and soy sauce mixture directly over the edamame. Toss constantly for 1 minute, allowing the sugars in the mirin to bubble and thicken into a glossy glaze that coats the pods.

  • 6

Remove the skillet from the heat. Drizzle 5 ml of toasted sesame oil over the glazed edamame and toss to combine.

  • 7

Transfer to a serving bowl, sprinkle with 5 g of toasted sesame seeds, and serve immediately.
