Chef's Note
Microwaving zucchini noodles is actually the secret to keeping them firm, as it vents away excess moisture instead of pooling it in a hot pan.

Ingredients
12 pieces frozen meatballs
6 oz zucchini noodles
1/2 cup jarred marinara sauce
Instructions
- 1
Place 12 frozen meatballs in a single layer in a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 3 minutes until heated through.
- 2
Line a microwave-safe plate with a dry paper towel, spread 6 oz of zucchini noodles evenly across it, and microwave on high for 2 minutes until tender but still firm.
- 3
Pour 1/2 cup of jarred marinara sauce into a small microwave-safe bowl, cover with a paper towel, and heat on high for 1 minute until bubbling.
- 4
Divide the heated meatballs: transfer 6 meatballs to an airtight container, let them cool slightly, and store in the refrigerator for tomorrow's lunch.
- 5
Transfer the remaining 6 meatballs and the steamed zucchini noodles to a serving bowl, pour the hot marinara sauce over them, and toss gently to combine.
