Chef's Note

The final tadka relies on a strict order of operations. We add the ground Kashmiri chili powder after turning off the heat. Because ground spices burn within seconds in hot fat, the residual heat of the ghee is more than enough to safely bloom the chili powder, unlocking its vibrant red color and smoky flavor without any bitterness.

Ingredients
  • 1 cup Toor Dal (split pigeon peas)

  • 1/2 cup Masoor Dal (split red lentils)

  • 4 cups Water

  • 1/2 tsp Turmeric powder

  • 1.5 tsp Salt

  • 3 tbsp Ghee (or neutral oil)

  • 1.5 tsp Cumin seeds

  • 1 tsp Mustard seeds

  • 1/4 tsp Asafoetida (hing)

  • 3 whole Dried red chilies

  • 1 medium Yellow onion, finely chopped

  • 1 tbsp Ginger, minced

  • 2 tbsp Garlic, minced

  • 2 whole Green chilies, slit lengthwise

  • 1 large Roma tomato, finely chopped

  • 1 tsp Kashmiri red chili powder

  • 1 tsp Kasoori methi (dried fenugreek leaves)

  • 1/4 cup Fresh cilantro, chopped

  • 1 tbsp Lemon juice

Instructions
  • 1

Rinse the toor dal and masoor dal under cold water until the water runs clear, then drain well.

  • 2

In a medium pot, combine the rinsed lentils, water, turmeric powder, and 1 teaspoon of salt. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 25 minutes until the lentils are completely soft. Whisk gently to break them down into a creamy consistency.

  • 3

Prepare the base tempering: Heat 1.5 tablespoons of ghee in a large pan over medium heat. Add 1/2 teaspoon of cumin seeds and let them sizzle for 15 seconds.

  • 4

Add the chopped onion, half of the minced garlic, and the minced ginger to the pan. Sauté for 5 to 6 minutes until the onions turn golden brown.

  • 5

Add the chopped tomatoes and slit green chilies. Cook for 4 to 5 minutes until the tomatoes soften and release their oils.

  • 6

Pour the cooked lentils into the pan with the tomato-onion base. Stir well and simmer on low heat for 5 minutes. Stir in the kasoori methi and lemon juice, then transfer the dal to a serving bowl.

  • 7

Prepare the final, crucial tadka: In a small tempering pan or skillet, heat the remaining 1.5 tablespoons of ghee over medium-high heat.

  • 8

Once the ghee is hot but not smoking, add the remaining 1 teaspoon of cumin seeds and 1 teaspoon of mustard seeds. When they start to splutter and pop (about 10 seconds), add the remaining minced garlic, whole dried red chilies, and asafoetida (hing). Fry for 15 seconds until the garlic turns golden brown.

  • 9

Turn off the heat immediately and stir in the Kashmiri red chili powder, letting the residual heat bloom the spice without burning it.

  • 10

Pour the sizzling hot tadka directly over the cooked lentils in the serving bowl. Garnish with fresh cilantro and serve immediately with basmati rice or warm naan.
