Chef's Note
Toss apple slices in lemon juice to block the polyphenol oxidase enzyme and prevent unsightly browning.

Ingredients
2 whole butter croissants
120 g Brie cheese
1 whole Granny Smith apple
2 tbsp honey
1/4 tsp dried red chili flakes
30 g fresh rocket leaves
2 tsp Dijon mustard
1 tsp lemon juice
Instructions
- 1
Core and thinly slice 1 whole Granny Smith apple into 0.3 cm slices. In a small bowl, gently toss the apple slices with 1 tsp lemon juice to prevent them from browning.
- 2
In a small microwave-safe bowl, combine 2 tbsp honey and 1/4 tsp dried red chili flakes. Warm in the microwave for 15 to 20 seconds (or in a small saucepan over low heat for 1 minute) to infuse the honey with heat.
- 3
Slice 2 whole butter croissants in half horizontally. Place them cut-side down in a dry frying pan over medium heat for 1 to 2 minutes until lightly toasted and warm.
- 4
Spread 1 tsp Dijon mustard across the bottom half of each toasted croissant.
- 5
Slice 120 g Brie cheese into thin strips and divide them evenly over the mustard on the bottom halves of the croissants.
- 6
Layer the lemon-tossed apple slices over the Brie cheese.
- 7
Drizzle 1 tbsp of the warm chili-infused honey over the apple layer on each sandwich.
- 8
Top each sandwich with 15 g fresh rocket leaves, close with the top half of the croissant, and serve immediately.
