Chef's Note
Clean grill grates and a light coat of fat prevent delicate fruit sugars from sticking and tearing.

Ingredients
3 whole fresh peaches
1 tbsp unsalted butter
2 tbsp raw slivered almonds
3/4 cup plain Greek yogurt
1/4 tsp ground cinnamon
3 tbsp honey
6 whole fresh mint leaves
Instructions
- 1
Preheat your grill or campfire grate to medium heat (approximately 350°F to 400°F). Ensure the grates are scraped completely clean.
- 2
Slice 3 fresh peaches in half along their seams, gently twist to separate, and remove the pits.
- 3
Melt 1 tbsp unsalted butter. Brush the cut sides of the peach halves evenly with the melted butter.
- 4
Create a small pouch out of aluminum foil and place 2 tbsp raw slivered almonds inside. Place the foil packet on the grill grates for 3 to 4 minutes, shaking occasionally, until the almonds are fragrant and lightly golden. Remove and set aside.
- 5
Place the buttered peach halves cut-side down directly onto the clean grill grates. Grill undisturbed for 4 to 5 minutes until dark grill marks form and the fruit begins to soften and release its juices.
- 6
Carefully flip the peaches using tongs and cook on the skin side for an additional 2 to 3 minutes until warmed completely through.
- 7
While the peaches finish grilling, divide 3/4 cup plain Greek yogurt evenly among 3 serving bowls (1/4 cup per bowl) and spread it into a smooth base. Dust each bowl with a pinch of the 1/4 tsp ground cinnamon.
- 8
Place two warm grilled peach halves on top of the yogurt in each bowl. Drizzle 1 tbsp honey over each serving, then garnish with the toasted slivered almonds and 6 fresh mint leaves torn gently by hand.
