Chef's Note
Pressing a shallow dimple into the center of your raw beef patties keeps them perfectly flat and even on the grill.

Ingredients
1.25 lbs raw ground beef (80/20 blend)
3 pieces raw medium zucchini
1 large raw yellow onion
3 pieces hamburger buns
3 oz cheddar cheese block
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Instructions
- 1
Wash 3 medium zucchinis, trim off the ends, and slice each lengthwise into 4 thick wedges.
- 2
Peel 1 large yellow onion and slice it crosswise into 1/2-inch thick rounds, keeping the rings intact.
- 3
In a large bowl, toss the zucchini wedges and onion rounds with 1.5 tablespoons of olive oil, 1 teaspoon of smoked paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- 4
Divide 1.25 pounds of raw ground beef into 3 equal portions. Shape each portion gently into a patty about 3/4-inch thick, making them slightly wider than the buns. Press a shallow 1/2-inch deep indentation in the center of each patty with your thumb.
- 5
Season both sides of the beef patties evenly with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- 6
Slice 3 ounces of cheddar cheese block into 3 equal slices.
- 7
Preheat your outdoor grill to medium-high heat (about 400°F to 450°F) and lightly oil the grates.
- 8
Place the seasoned zucchini wedges, onion rounds, and beef patties directly onto the hot grill grates.
- 9
Grill the zucchini and onions for 4 to 5 minutes per side, until tender and charred. Grill the beef patties for 4 to 5 minutes on the first side.
- 10
Flip the beef patties and grill for another 3 to 4 minutes. In the final 2 minutes, place 1 slice of cheddar cheese on each patty to melt, and place 3 split hamburger buns cut-side down on the grill to toast lightly.
- 11
Assemble the burgers by placing the cheesy patties on the toasted buns, topping with the grilled onion rings, and serving hot alongside the smoky zucchini wedges.
