Chef's Note
Cold temperatures enhance the perceived sweetness and crispness of bell peppers by stabilizing their cellular water pressure.

Ingredients
2 medium red bell pepper
1 medium orange bell pepper
1/2 cup caesar dressing
2 tbsp parmesan cheese
1/2 whole lemon
Instructions
- 1
Wash 2 red bell peppers and 1 orange bell pepper under cold water. Cut them in half, discard the seeds and inner white membranes, and slice them vertically into 1/2-inch thick strips.
- 2
Squeeze 1 tbsp of fresh juice from 1/2 lemon over the sliced bell peppers and toss gently to brighten their flavor and preserve their crisp texture.
- 3
In a small portable container, combine 1/2 cup of caesar dressing with 2 tbsp of freshly grated parmesan cheese. Whisk together to thicken the dip and add a savory punch.
- 4
To pack for travel: Place the lemon-tossed bell pepper strips into a reusable airtight container or zip-top bag. Keep the caesar dressing dip in its separate sealed container to prevent the peppers from getting soggy.
- 5
Pack both containers into an insulated cooler bag directly against ice packs to keep them cold, crisp, and refreshing for the drive to the campsite.
