Chef's Note
Cold temperatures mute flavors, so boost the acid and salt of chilled dips just before packing.

Ingredients
15 oz leftover cannellini beans (prepared as Lemon-Herb White Bean Dip)
3 medium carrots
3 oz whole wheat crackers
2 tbsp fresh flat-leaf parsley
0.5 whole lemon
1 tbsp extra virgin olive oil
Instructions
- 1
Wash 3 medium carrots under cold running water. Peel the carrots using a vegetable peeler, then slice them into 3-inch long, sturdy sticks perfect for dipping.
- 2
Wash 2 tbsp fresh flat-leaf parsley and finely chop the leaves.
- 3
Retrieve 15 oz of leftover cannellini beans (prepared as Lemon-Herb White Bean Dip from Day 1) from the refrigerator and place it in a medium mixing bowl.
- 4
Squeeze the juice of 0.5 whole lemon over the dip and stir in 1 tbsp of the chopped parsley to revive the bright, herbaceous flavors that naturally mute when chilled.
- 5
Divide the revived bean dip equally into 3 small, leak-proof portable containers. Drizzle 1 tsp of extra virgin olive oil over each portion and sprinkle with the remaining 1 tbsp chopped parsley.
- 6
Pack 3 oz of whole wheat crackers and the prepared carrot sticks into separate airtight bags or containers to keep them perfectly crisp.
- 7
Place the dip containers in an insulated cooler bag with ice packs next to the carrots and crackers, keeping them chilled and ready for your trail snack.
