Chef's Note
Warming stale or leftover blondies gelatinizes retrograded starches, restoring their original soft, chewy texture.

Ingredients
3 squares leftover peanut butter blondies (from Day 1)
1 medium banana
1 tbsp unsalted butter
1 tbsp light brown sugar
2 tbsp creamy peanut butter
2 tbsp heavy cream
3 scoops vanilla ice cream
Instructions
- 1
Preheat your oven to 300°F.
- 2
Peel 1 medium banana and slice it into 1/2-inch thick rounds.
- 3
Place the 3 squares of leftover peanut butter blondies on a small baking sheet. Warm them in the preheated oven for 5 to 7 minutes, just until they are soft and the chocolate chips inside begin to soften.
- 4
While the blondies are warming, heat 1 tbsp unsalted butter in a small skillet over medium heat. Add the sliced banana and sprinkle with 1 tbsp light brown sugar.
- 5
Cook the bananas for 2 minutes on each side without stirring too much, allowing the sugar to melt and caramelize into a golden brown syrup around the banana slices.
- 6
In a small microwave-safe bowl, combine 2 tbsp creamy peanut butter and 2 tbsp heavy cream. Microwave on high for 15 to 20 seconds, then stir vigorously until a smooth, pourable peanut butter sauce forms.
- 7
To assemble, place one warm leftover peanut butter blondie square onto each of three serving plates.
- 8
Top each blondie with 1 scoop of vanilla ice cream, divide the warm caramelized banana slices evenly over the ice cream, and drizzle with the warm peanut butter sauce.
