Ingredients
0.5 lb leftover cooked chicken breasts, diced
0.5 lb leftover cooked large shrimp
3 cups leftover cooked jasmine rice
2 medium carrots
1 cup green beans
2 medium shallots
3 cloves garlic cloves
2 tbsp kecap manis
1 tbsp soy sauce
3 large eggs
1 medium cucumber
1 large tomato
2 tbsp vegetable oil
1/2 tsp salt
1/4 tsp white pepper
Instructions
- 1
Peel 2 medium carrots and cut them into large 1/2-inch thick coins so they are easy to spot and sort out later. Trim 1 cup green beans and cut them into 1.5-inch lengths. Finely chop 2 medium shallots and mince 3 garlic cloves. Wash and slice 1 medium cucumber and 1 large tomato into thick rounds, then set these raw garnishes aside on a serving platter.
- 2
Place the carrot coins and green bean pieces into a microwave-safe bowl with 2 tbsp water. Cover and microwave on high for 3 minutes to steam them until they are crisp-tender, then drain any remaining water and set the vegetables aside.
- 3
Place 0.5 lb leftover cooked chicken breasts (diced) and 0.5 lb leftover cooked large shrimp into separate microwave-safe bowls. Microwave each bowl for 30 to 45 seconds just to take the chill off, then set them aside for individual plating.
- 4
Heat 1 tbsp vegetable oil in a large wok or cast-iron skillet over medium-high heat. Fry 3 large eggs sunny-side up for about 3 minutes until the whites are fully set but the yolks remain runny. Sprinkle the eggs with a pinch of salt, then carefully transfer them to a plate and set aside.
- 5
Add the remaining 1 tbsp vegetable oil to the same wok over medium heat. Add the chopped shallots and minced garlic, stir-frying for 1 to 2 minutes until translucent and fragrant, taking care not to burn the garlic. Stir in the steamed carrots and green beans, cooking for 1 minute.
- 6
Turn the stovetop heat up to high. Add the 3 cups of leftover cooked jasmine rice to the wok, using a spatula to break up any clumps. Drizzle 2 tbsp kecap manis and 1 tbsp soy sauce evenly over the rice, then season with 1/4 tsp white pepper and 1/2 tsp salt. Toss and stir-fry continuously for 3 to 4 minutes until the rice is heated through, slightly caramelized, and uniform in color.
- 7
Divide the fried rice into three servings. For the portion designated for your husband, toss in the warmed 0.5 lb leftover cooked chicken breasts. For your portion, toss in the warmed 0.5 lb leftover cooked large shrimp (or combine them as desired). Plate each portion, top with a fried egg, and serve immediately with the fresh, raw sliced cucumber and tomato on the side.
