Chef's Note

Stirring high-starch rice vigorously rubs off its outer starches to create a rich, creamy sauce without adding heavy cream.

Ingredients
  • 1 lb raw, peeled, and deveined shrimp (medium, 31-40 count)

  • 8 oz raw andouille sausage

  • 1.5 cups uncooked long-grain white rice

  • 1 medium yellow onion

  • 1 medium green bell pepper

  • 2 medium celery stalks

  • 3 cloves garlic cloves

  • 1.5 tbsp Cajun seasoning blend

  • 2 cups low-sodium chicken broth

  • 1 tbsp cooking oil

Instructions
  • 1

Prepare the ingredients: Dice 1 medium yellow onion, 1 medium green bell pepper, and 2 medium celery stalks. Mince 3 garlic cloves. Slice 8 oz raw andouille sausage into 1/4-inch thick rounds. Pat dry 1 lb raw, peeled, and deveined shrimp with a paper towel and set aside.

  • 2

Turn the Instant Pot to 'Saute' mode. Add 1 tbsp cooking oil to the inner pot. Once the oil is hot, add the sliced 8 oz raw andouille sausage and cook for 4 minutes until lightly browned on both sides.

  • 3

Add the diced 1 medium yellow onion, 1 medium green bell pepper, and 2 medium celery stalks to the pot with the sausage. Sauté for 4 minutes, stirring frequently, until the vegetables begin to soften.

  • 4

Stir in the minced 3 garlic cloves and cook for 1 minute until fragrant. Do not let the garlic burn.

  • 5

Add 1.5 tbsp Cajun seasoning blend and stir to coat the vegetables and sausage. Pour in 1/4 cup of the 2 cups chicken broth to deglaze the pot, using a wooden spoon to scrape up any browned bits stuck to the bottom to prevent a 'burn' warning.

  • 6

Add 1.5 cups uncooked long-grain white rice and the remaining 1.75 cups chicken broth. Stir gently to combine, then use your spoon to press the rice down so it is completely submerged in the liquid.

  • 7

Secure the Instant Pot lid and set the steam release valve to 'Sealing'. Cancel 'Saute' mode, select 'Manual/Pressure Cook' on High Pressure, and set the timer for 7 minutes.

  • 8

When the cooking cycle finishes, allow the pressure to release naturally for 10 minutes, then carefully turn the valve to 'Venting' to release any remaining steam. Remove the lid.

  • 9

Turn the Instant Pot back to 'Saute' mode on the lowest heat setting. Immediately add the 1 lb raw, peeled, and deveined shrimp to the pot. Gently fold the shrimp into the hot rice for 3 minutes, letting the residual heat and gentle saute heat poach them until they are pink, curled, and opaque.

  • 10

Cancel 'Saute' mode. Let the dirty rice rest for 2 minutes to absorb any remaining liquid, then fluff gently with a fork and serve hot.
