Chef's Note
Toasting grains and nuts reduces their moisture content, keeping them crunchy longer when stored or paired with wet ingredients.

Ingredients
2/3 cup rolled oats
1 1/2 tbsp raw sliced almonds
1 tbsp chia seeds
1/4 tsp ground cinnamon
1 cup unsweetened almond milk
1/2 cup plain Greek yogurt (0% fat)
1 1/4 scoops vanilla whey protein powder
1/2 tsp vanilla extract
2/3 cup raw mixed berries
Instructions
- 1
Heat a dry skillet over medium heat on the stovetop. Add 2/3 cup rolled oats and 1 1/2 tbsp raw sliced almonds. Toast, stirring constantly, for 3 to 4 minutes until the oats are fragrant and the almonds are lightly golden.
- 2
Immediately transfer the toasted 2/3 cup rolled oats to a mixing bowl and the 1 1/2 tbsp toasted almonds to a separate small bowl to cool completely.
- 3
In a medium bowl or 16-ounce mason jar, combine the toasted 2/3 cup rolled oats, 1 tbsp chia seeds, and 1/4 tsp ground cinnamon.
- 4
Add 1 cup unsweetened almond milk, 1/2 cup plain Greek yogurt, 1 1/4 scoops vanilla whey protein powder, and 1/2 tsp vanilla extract to the dry mixture. Whisk or stir vigorously until the protein powder is completely dissolved and no clumps remain.
- 5
Gently fold in half of the raw mixed berries (about 1/3 cup) into the oat mixture.
- 6
Cover the jar or bowl tightly with a lid or plastic wrap. Place in the refrigerator to cold-soak overnight, or for at least 8 hours (480 minutes), to allow the chia seeds and oats to fully hydrate and thicken.
- 7
In the morning, stir the overnight oats well. Top with the remaining 1/3 cup raw mixed berries and the reserved toasted 1 1/2 tbsp sliced almonds for a crunchy finish.
