Chef's Note

To maximize the hydration and gelling of chia seeds, mix them into the yogurt first and let sit for 3 minutes before adding other toppings.

Ingredients
  • 1/4 cup uncooked white quinoa

  • 1 3/4 cups plain nonfat Greek yogurt

  • 1 1/4 tbsp raw chia seeds

  • 1/2 oz raw walnuts

  • 3/4 cup raw mixed berries

Instructions
  • 1

Rinse 1/4 cup of uncooked white quinoa thoroughly in a fine-mesh strainer under cold running water to remove its bitter saponin coating.

  • 2

In a small saucepan, combine the rinsed quinoa with 1/2 cup of water. Bring to a boil over high heat, then cover, reduce heat to low, and simmer for 15 minutes until the liquid is fully absorbed.

  • 3

Remove the saucepan from the heat and let it stand covered for 5 minutes. Fluff the cooked quinoa with a fork and let it cool completely.

  • 4

In your serving bowl, combine 1 3/4 cups of plain nonfat Greek yogurt and 1 1/4 tablespoons of raw chia seeds. Stir well and let the mixture sit for 3 minutes to allow the chia seeds to hydrate and gel.

  • 5

Roughly chop 1/2 ounce of raw walnuts using a chef's knife.

  • 6

Wash 3/4 cup of raw mixed berries and gently pat them dry with a paper towel.

  • 7

Top the hydrated yogurt mixture with the cooled cooked quinoa, the chopped raw walnuts, and the fresh mixed berries. Stir gently to combine the sweet, tart, and earthy layers before eating.
