Chef's Note
Whisking egg whites into simmering oatmeal creates a thick, custard-like texture through protein emulsification.

Ingredients
48 g rolled oats
150 ml whole milk
80 g liquid egg whites
90 g apple
10 g raw walnuts
5 g honey
2 g ground cinnamon
100 ml water
Instructions
- 1
Wash, core, and finely chop 90g of raw apple into small 0.5 cm pieces so they soften quickly.
- 2
In a small saucepan, combine 48g of rolled oats, 150ml of whole milk, 100ml of water, 2g of ground cinnamon, and a pinch of salt.
- 3
Place the saucepan over medium-high heat and bring to a gentle boil, then immediately reduce the heat to low to maintain a gentle simmer.
- 4
Simmer for 4 minutes, stirring frequently, until the oats begin to soften and absorb the liquid.
- 5
Stir in the finely chopped 90g of apple pieces and simmer for another 2 minutes.
- 6
Turn the heat to low, then slowly pour in 80g of liquid egg whites while whisking constantly and vigorously to prevent scrambling.
- 7
Continue whisking rapidly over low heat for 1 to 2 minutes until the oatmeal becomes thick, fluffy, and creamy.
- 8
Remove the saucepan from the heat, stir in 5g of honey, transfer to a bowl, and top with 10g of chopped raw walnuts before serving.
