Chef's Note
Toasting nuts and grains evaporates internal moisture, delaying sogginess and intensifying their natural, nutty flavors.

Ingredients
40 g raw rolled oats
12 g raw walnut halves
110 g raw banana
125 ml unsweetened soy milk
11 g vanilla whey protein powder
5 g chia seeds
1/2 tsp ground cinnamon
1/4 tsp vanilla extract
1/8 tsp salt
125 ml water
Instructions
- 1
Place a small saucepan over medium heat. Add 12 g raw walnut halves and dry-toast them, stirring constantly, for 2 to 3 minutes until fragrant and lightly golden. Remove the walnuts, chop them coarsely, and set aside.
- 2
In the same dry saucepan, add 40 g raw rolled oats. Toast the oats over medium heat for 2 minutes, stirring frequently, until they release a nutty aroma.
- 3
Pour 125 ml unsweetened soy milk and 125 ml water into the saucepan with the toasted oats. Add 1/8 tsp salt and 1/2 tsp ground cinnamon. Bring the mixture to a rapid simmer over medium-high heat.
- 4
Once simmering, reduce the heat to medium-low. Cook for 5 minutes, stirring occasionally, until the oats are creamy and have absorbed most of the liquid.
- 5
While the oatmeal cooks, peel 110 g raw banana and slice it into thin rounds. Slice half of the banana rounds into small pieces to stir into the oatmeal, and keep the remaining slices intact for topping.
- 6
Remove the saucepan from the heat. Stir in 5 g chia seeds, 1/4 tsp vanilla extract, the chopped banana pieces, and 11 g vanilla whey protein powder. Whisk vigorously until the protein powder is completely dissolved and the oatmeal is thick and creamy.
- 7
Pour the oatmeal into a serving bowl. Top with the remaining sliced banana and the toasted, chopped walnuts. Serve warm.
