Chef's Note
For a clean slice and easy mashing, ensure your avocados yield slightly to gentle pressure. If you prefer over-easy eggs, simply flip them in the skillet for the final 30 seconds of cooking.

Ingredients
3 slices whole wheat bread
2 medium avocados
3 large eggs
1/2 whole lemon
1 tbsp unsalted butter
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp red pepper flakes
Instructions
- 1
Slice 2 medium avocados in half, remove the pits, and scoop the flesh into a medium bowl. Squeeze 1 tsp of fresh juice from the 1/2 lemon into the bowl. Add 1/4 tsp salt and 1/4 tsp black pepper, then mash with a fork until chunky-smooth.
- 2
Toast 3 slices of whole wheat bread in a toaster or on a dry cast-iron skillet over medium heat for 2 to 3 minutes until golden brown and crispy.
- 3
Heat 1 tbsp of unsalted butter in a cast-iron skillet over medium-low heat. Crack 3 large eggs into the skillet, keeping them separated. Cook for 3 to 4 minutes until the whites are set but the yolks are still runny. Season each egg with a pinch of salt and black pepper.
- 4
Divide the mashed avocado mixture evenly among the 3 toasted slices of whole wheat bread, spreading it to the edges.
- 5
Carefully slide one fried egg onto each slice of avocado toast. Sprinkle 1/4 tsp red pepper flakes evenly over the eggs and serve immediately.
