Chef's Note

Toasting the bread in a dry cast-iron skillet gives it an incredible, rustic crunch that holds up perfectly under the heavy peanut butter and banana toppings!

Ingredients
  • 6 slices whole wheat bread

  • 6 tbsp creamy peanut butter

  • 2 whole bananas

  • 1/2 tsp ground cinnamon

  • 1 1/2 tbsp honey

Instructions
  • 1

Peel the 2 bananas and slice them into 1/4-inch thick rounds.

  • 2

Place a cast-iron skillet over medium heat on the stovetop. Add the 6 slices of whole wheat bread to the dry skillet (working in batches if needed) and toast for 1 to 2 minutes per side until golden brown and crisp.

  • 3

Spread 1 tablespoon of creamy peanut butter evenly over each of the 6 toasted bread slices.

  • 4

Divide and arrange the sliced bananas evenly on top of the peanut butter across all pieces of toast.

  • 5

Dust the toasts evenly with the 1/2 teaspoon of ground cinnamon and drizzle with the 1 1/2 tablespoons of honey (about 1/4 tablespoon per slice). Serve immediately.
