Chef's Note
This recipe is a fantastic way to stretch your grocery budget by using the pre-seasoned beef from Day 2! The hint of molasses adds that signature sweet-and-savory Sloppy Joe depth without needing a pre-made store sauce.

Ingredients
1.25 lb leftover seasoned ground beef
8 oz elbow macaroni pasta
1 medium green bell pepper
15 oz tomato sauce
1 tbsp molasses
0.5 tsp onion powder
1 cup shredded cheddar cheese
1 tbsp vegetable oil
Instructions
- 1
Bring a large pot of salted water to a boil over high heat. Add 8 oz elbow macaroni pasta and cook for 8 minutes until al dente. Drain the pasta and set aside.
- 2
While the pasta cooks, wash 1 medium green bell pepper, remove the stem and seeds, and finely dice it.
- 3
Heat 1 tbsp vegetable oil in a large skillet over medium heat. Add the diced green bell pepper and sauté for 4 to 5 minutes until it begins to soften.
- 4
Stir 15 oz tomato sauce, 1 tbsp molasses, and 0.5 tsp onion powder into the skillet with the green pepper. Bring the mixture to a gentle simmer.
- 5
Add 1.25 lb leftover seasoned ground beef (reserved from Day 2) to the skillet. Stir thoroughly to combine the beef with the sauce and peppers. Simmer over medium-low heat for 5 minutes, allowing the beef to heat through completely and the flavors to meld.
- 6
Add the drained elbow macaroni pasta to the skillet and stir until the pasta is evenly coated in the warm sloppy joe sauce.
- 7
Sprinkle 1 cup shredded cheddar cheese evenly over the top of the skillet. Cover the skillet with a lid or foil for 2 minutes to allow the cheese to melt completely before serving.
