Chef's Note
This recipe is a budget superstar! By cooking all 2.5 pounds of beef at once, you save time and energy. Just be sure to scoop out half of the seasoned meat before adding the beans, tomatoes, and corn so you have a perfectly seasoned base ready for Day 4.

Ingredients
2.5 lb ground beef
1 tbsp vegetable oil
1.5 tbsp chili powder
1 tsp onion powder
1 tsp salt
0.5 tsp black pepper
15 oz canned black beans
10 oz canned diced tomatoes with green chilies
1 cup frozen corn
1 cup shredded cheddar cheese
Instructions
- 1
Heat 1 tbsp vegetable oil in a large skillet over medium-high heat.
- 2
Add 2.5 lb raw ground beef to the skillet. Cook, breaking the meat up with a wooden spoon, until it is completely browned and cooked through, about 8 to 10 minutes. Carefully drain any excess grease from the pan.
- 3
Sprinkle 1.5 tbsp chili powder, 1 tsp onion powder, 1 tsp salt, and 0.5 tsp black pepper evenly over the beef. Stir well to fully coat the meat in the seasonings.
- 4
Transfer exactly half of this cooked, seasoned ground beef (approximately 1.25 lb) into an airtight container. Allow it to cool, then seal and store in the refrigerator for Day 4 Sloppy Joe Macaroni.
- 5
To the remaining half of the seasoned ground beef in the skillet, add 15 oz canned black beans (drained and rinsed), 10 oz canned diced tomatoes with green chilies (with their juices), and 1 cup frozen corn.
- 6
Reduce the heat to medium-low and simmer the mixture uncovered for 5 to 7 minutes, stirring occasionally, until the liquid has reduced and the beans and corn are heated through.
- 7
Sprinkle 1 cup shredded cheddar cheese evenly over the beef and vegetable mixture. Cover the skillet with a lid for 2 minutes, or until the cheese is completely melted and bubbly. Serve warm.
