Chef's Note

Using two sheet pans is a great trick if your sweet potatoes and chicken look crowded. Giving them breathing room ensures they roast and caramelize beautifully instead of steaming!

Ingredients
  • 4 lb boneless, skinless chicken thighs

  • 1 lb sweet potatoes

  • 12 oz green beans

  • 1 whole orange

  • 4 cloves garlic

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp chili powder

  • 1/4 cup fresh cilantro

  • 3 TBSP olive oil

  • 1.5 tsp salt

  • 1/2 tsp black pepper

Instructions
  • 1

Preheat your oven to 425 degrees F (218 degrees C).

  • 2

Wash and peel 1 lb of sweet potatoes, then cut them into 1/2-inch cubes. Wash and trim the tough ends off 12 oz of green beans. Mince 4 cloves of garlic. Finely grate the zest of 1 whole orange to get 1 tsp of zest, then squeeze the orange to yield 1/4 cup of fresh orange juice.

  • 3

In a small bowl, whisk together 1/4 cup of orange juice, 1 tsp of orange zest, 4 minced garlic cloves, 2 tsp of ground cumin, 1 tsp of ground coriander, 1 tsp of chili powder, 3 TBSP of olive oil, 1.5 tsp of salt, and 1/2 tsp of black pepper to create the marinade.

  • 4

Do not wash the chicken. Pat dry 4 lbs of raw boneless, skinless chicken thighs with paper towels. Place the chicken thighs in a large bowl and pour 2/3 of the prepared citrus-cumin marinade over them, tossing to coat every piece thoroughly.

  • 5

Place the cubed sweet potatoes onto a large rimmed sheet pan (use two sheet pans if needed to avoid crowding, which prevents proper roasting). Drizzle the remaining 1/3 of the marinade over the sweet potatoes and toss to coat. Spread them out, then nestle the marinated chicken thighs in a single layer among the sweet potatoes.

  • 6

Roast in the preheated oven for 15 minutes. While roasting, toss the trimmed green beans with a light drizzle of olive oil and a pinch of salt.

  • 7

Carefully remove the sheet pan from the oven. Scatter the green beans evenly around the chicken and sweet potatoes. Return the sheet pan to the oven and roast for an additional 10 minutes, or until the chicken thighs reach an internal temperature of 165 degrees F (74 degrees C) and the sweet potatoes are tender.

  • 8

Garnish the entire sheet pan with 1/4 cup of chopped fresh cilantro.

  • 9

To serve, plate half of the roasted chicken thighs (approximately 1.5 lbs cooked) alongside the roasted sweet potatoes and green beans for tonight's dinner. Allow the remaining cooked chicken thighs to cool completely, then place them in an airtight container and refrigerate to use for the Day 3 skillet meal.
