4 cups Short-grain white rice, cooked
14 oz Firm tofu, pressed and sliced into 1/2-inch rectangles
2 tbsp Toasted sesame oil, divided
3 tbsp Soy sauce, divided
3 tbsp Water
1 tbsp Gochugaru (Korean chili flakes)
1 tsp Sugar
3 cloves Garlic, minced and divided
2 stalks Green onions, thinly sliced
10 oz Fresh baby spinach
1 tsp Toasted sesame seeds
1/2 tsp Salt

Prepare the braising liquid for the tofu (Jorim component) by whisking together 3 tablespoons of soy sauce, 3 tablespoons of water, gochugaru, sugar, 2 cloves of minced garlic, and the sliced green onions in a small bowl.

Heat 1 tablespoon of sesame oil in a non-stick skillet over medium-high heat. Add the tofu slices and sear for 3 to 4 minutes per side until they develop a golden-brown crust.

Pour the braising liquid over the tofu. Reduce the heat to low, cover, and simmer for 5 to 7 minutes, spooning the sauce over the tofu occasionally, until the liquid is mostly absorbed. Remove from heat and set aside.

Bring a large pot of salted water to a boil. Add the spinach and blanch for exactly 30 seconds. Immediately drain and plunge the spinach into an ice bath to stop the cooking process.

Squeeze as much excess water out of the cooled spinach as possible using your hands, then roughly chop it.

In a mixing bowl, toss the chopped spinach with the remaining 1 tablespoon of sesame oil, 1 teaspoon of soy sauce, 1 clove of minced garlic, and toasted sesame seeds (Namul component).

To assemble your lunch bowls, portion 1 cup of warm rice into each of four containers. Divide the braised tofu and seasoned spinach evenly among the bowls, arranging them neatly side-by-side over the rice. Garnish with additional sesame seeds if desired.
