Chef's Note
Preheating the thermos with boiling water is the absolute secret to keeping school lunches hot until lunchtime! Be sure to cut the chicken into small, bite-sized pieces before packing so it is easy for kids to eat with just a spoon.

Ingredients
4 servings leftover lemon-herb chicken and orzo
1/4 cup low-sodium chicken broth
1 whole lemon
Instructions
- 1
Boil 4 cups of water. Pour the boiling water into 4 insulated food thermoses, seal the lids, and let them sit for 5 minutes to preheat the metal interiors.
- 2
While the thermoses preheat, cut 1 fresh lemon in half.
- 3
In a medium saucepan, combine 4 servings of leftover lemon-herb chicken and orzo and 1/4 cup of low-sodium chicken broth to help keep the pasta moist during reheating.
- 4
Place the saucepan over medium heat and cook for 6 to 8 minutes, stirring frequently to prevent the pasta from sticking, until the chicken and orzo are steaming hot and reach an internal temperature of 165°F (74°C).
- 5
Remove the saucepan from the heat. Squeeze 1 tablespoon of fresh juice from the halved lemon over the mixture and stir well to brighten the Mediterranean flavors.
- 6
Carefully pour the hot water out of the thermoses and pat the inside dry. Immediately divide the hot chicken and orzo mixture evenly among the 4 preheated thermoses and seal the lids tightly to lock in the heat.
