Chef's Note
Simmering the peaches not only makes them perfectly soft and safe for your toddler, but it also coaxes out their natural sugars to create a delicious, jam-like syrup that marbles beautifully through the Greek yogurt.

Ingredients
4 cups plain Greek yogurt
4 medium fresh peaches
6 tbsp honey
1.5 tsp vanilla extract
1 cup rolled oats
1/2 tsp ground cinnamon
Instructions
- 1
Wash, peel, and pit the 4 medium fresh peaches. Dice them into small 1/4-inch cubes to ensure they are safe and easy for a toddler to chew.
- 2
In a small saucepan over medium-low heat, combine the diced peaches, 2 tablespoons of water, and 1 tablespoon of honey. Simmer gently for 6 to 8 minutes until the peaches are translucent and very soft. Remove from heat and let cool completely.
- 3
In a dry skillet over medium heat, add 1 cup of rolled oats and 1/2 teaspoon of ground cinnamon. Toast, stirring constantly, for 3 to 4 minutes until fragrant. Drizzle with 1 tablespoon of honey, stir quickly to coat, and cook for 1 more minute. Remove from heat and let cool to form a semi-soft oat crumble.
- 4
In a medium bowl, vigorously whisk together 4 cups of plain Greek yogurt, the remaining 4 tablespoons of honey, and 1.5 teaspoons of vanilla extract until completely smooth and creamy.
- 5
For the adults and the 10-year-old child: Assemble 4 parfaits by layering 1/3 cup of the sweetened vanilla Greek yogurt, a spoonful of the soft simmered peaches, and a sprinkle of the toasted oat crumble in glasses or jars. Repeat the layers.
- 6
For the 2-year-old toddler's portion: In a small, child-safe bowl, layer only the smooth vanilla Greek yogurt and the ultra-soft diced peaches. Omit the toasted oat crumble entirely to prevent any choking hazard, ensuring a safe and soft self-feeding meal.
