Chef's Note
Tossing the apple slices in lemon juice is a lifesaver for school lunches as it keeps them looking fresh and bright. For your toddler, peeling and slicing the apples paper-thin is crucial, and whipping the peanut butter with Greek yogurt lightens the texture so it is much safer and less sticky for young children to swallow.

Ingredients
4 medium raw red apples (such as Gala or Honeycrisp)
5 TBSP creamy peanut butter (100% peanuts, unsalted)
2 cup plain nonfat Greek yogurt
7 TBSP powdered peanut butter
1.5 TBSP honey
1 TBSP lemon juice
1/2 tsp ground cinnamon
Instructions
- 1
In a medium mixing bowl, combine 2 cups plain nonfat Greek yogurt, 5 TBSP creamy peanut butter, 7 TBSP powdered peanut butter, 1.5 TBSP honey, and 1/2 tsp ground cinnamon.
- 2
Whisk the mixture vigorously for 1 to 2 minutes until it becomes completely smooth, light, and whipped in texture. Set the dip aside.
- 3
Wash and dry 4 medium raw red apples thoroughly.
- 4
To prepare the school lunch portion for your 10-year-old: Core 3 of the apples and slice them into 1/2-inch thick wedges. Toss these wedges with 1 TBSP lemon juice in a small bowl to prevent oxidation and browning. Pack the apple slices into an airtight container, and portion the whipped peanut butter dip into separate small, lidded dipping cups.
- 5
To prepare the safe portion for your 2-year-old toddler: Take the remaining 1 apple, completely peel off the skin using a vegetable peeler, and remove the core. Slice the apple into paper-thin half-moons or matchsticks (less than 1/8-inch thick) to eliminate any choking hazards.
- 6
Spread an extremely thin, translucent layer (about 1/4 tsp per slice) of the whipped peanut butter dip directly onto the toddler's thin apple slices, ensuring it is not thick or sticky, and arrange them on a plate for safe self-feeding.
