Chef's Note
To get a restaurant-quality sear on the chicken, make sure your wok is incredibly hot before adding the oil, and don't overcrowd the pan. Searing in batches is the secret to locking in juices and building a rich fond without steaming the meat!

Ingredients
4 lb chicken breasts
1.5 cups uncooked brown rice
3 stalks fresh lemongrass stalks
6 cloves garlic cloves
2 medium shallots
4 pieces bird's eye chilies
1 inch fresh ginger
1 lb baby bok choy
3 TBSP fish sauce
2 TBSP low-sodium soy sauce
1.5 TBSP brown sugar
1.5 tsp cornstarch
1 whole fresh lime
0.5 cup fresh cilantro
Instructions
- 1
Rinse 1.5 cups of uncooked brown rice thoroughly in a fine-mesh strainer. In a medium saucepan, combine the rinsed rice with 3 cups of water and a pinch of salt. Bring to a boil over high heat, then immediately reduce the heat to low, cover with a tight-fitting lid, and simmer undisturbed for 45 minutes. Remove from the heat and let steam, covered, for an additional 10 minutes before fluffing with a fork.
- 2
While the rice cooks, prepare the lemongrass. Cut off the spiked top and the woody base of the 3 lemongrass stalks. Peel away the tough, fibrous outer layers until you reach the pale, tender inner core. Finely mince this core to yield about 3 tablespoons.
- 3
Mince the 6 garlic cloves, peel and finely slice the 2 shallots, grate the 1-inch piece of peeled fresh ginger, and thinly slice the 4 bird's eye chilies (leave the seeds in for a true 7/10 spice level, or remove them for less heat).
- 4
Prepare the vegetable component: Slice 1 lb of baby bok choy in half lengthwise. Wash thoroughly under cold running water to remove any trapped dirt between the leaves, then pat completely dry with a clean kitchen towel.
- 5
Prepare the protein: Pat the 4 lb of raw chicken breasts completely dry with paper towels. Cut the chicken into uniform 1-inch bite-sized pieces. Season the chicken evenly with 1 teaspoon of salt and 0.5 teaspoon of black pepper.
- 6
In a small bowl, whisk together the sauce ingredients: 3 tablespoons of fish sauce, 2 tablespoons of low-sodium soy sauce, 1.5 tablespoons of brown sugar, and 0.5 cup of water. In a separate small bowl, mix 1.5 teaspoons of cornstarch with 1 tablespoon of cold water to create a smooth slurry; set both bowls aside.
- 7
Heat 1.5 tablespoons of canola oil in a large wok or deep, heavy-bottomed skillet over high heat until shimmering. To prevent crowding and steaming, add exactly half of the seasoned chicken (2 lb) in a single layer. Sear without moving for 2 to 3 minutes to develop a golden-brown fond, then toss and cook for another 2 minutes until just cooked through. Transfer the seared chicken to a clean bowl.
- 8
Add another 1.5 tablespoons of canola oil to the hot wok and repeat the process with the remaining 2 lb of chicken. Transfer this second batch to the same bowl as the first.
- 9
Reduce the heat to medium-high. Add 1 tablespoon of canola oil to the wok. Add the minced lemongrass, shallots, garlic, ginger, and bird's eye chilies. Stir-fry constantly for 1 to 2 minutes until highly fragrant and the shallots are translucent, being careful not to let the garlic burn.
- 10
Add the halved baby bok choy to the wok. Stir-fry for 2 minutes, tossing frequently, until the green leaves wilt slightly but the white stems remain crisp.
- 11
Return all the cooked chicken and any accumulated juices back into the wok. Pour the fish sauce mixture over the ingredients and toss well to combine. Bring the liquid to a simmer.
- 12
Give the cornstarch slurry a quick stir, then pour it into the simmering wok. Toss constantly for 1 to 2 minutes until the sauce thickens and forms a glossy glaze over the chicken and bok choy. Remove the wok from the heat and squeeze the juice of 1 fresh lime over the stir-fry.
- 13
CRITICAL STEP FOR MEAL PLAN: Measure out exactly half of the completed chicken stir-fry (approximately 2 lb of cooked chicken plus half of the vegetables and sauce). Place this portion into an airtight container, let it cool, and store it in the refrigerator to be used for the Day 4 lunch salad.
- 14
To serve, divide the fluffed brown rice among 4 plates. Top each portion with the remaining warm lemongrass chicken and bok choy stir-fry. Garnish generously with 0.5 cup of chopped fresh cilantro.
