Chef's Note
Searing the chicken in batches is key to building a deep, rich fond (the browned bits stuck to the pan). If you crowd the pan, the chicken will steam instead of sear, and you will lose out on that deep savory base for your deglazed white wine sauce!

Ingredients
4 lb raw boneless skinless chicken breasts
45 oz canned cannellini beans
2 cups cherry tomatoes
6 cloves garlic cloves
2 medium shallots
1 cup fresh basil leaves
1 tsp dried oregano
1.5 cups low-sodium vegetable broth
1/2 cup dry white wine
1 sprig fresh rosemary
1 whole lemon
2 cups fresh baby spinach
3 TBSP extra virgin olive oil
1 tsp salt
1/2 tsp black pepper
Instructions
- 1
Prepare the fresh components: Drain and rinse 45 oz of canned cannellini beans. Peel and finely chop 2 medium shallots, and mince 6 garlic cloves. Wash and halve 2 cups of cherry tomatoes. Grate the zest of 1 whole lemon, then squeeze out its juice, keeping them separate.
- 2
Create the creamy bean emulsion: In a blender or food processor, combine 1 cup of the drained cannellini beans, 1/2 cup of low-sodium vegetable broth, and 2 TBSP of the freshly squeezed lemon juice. Blend on high speed until completely smooth and creamy. This mixture will serve as our low-saturated-fat thickening agent. Set aside.
- 3
Prepare the chicken: Pat dry 4 lb of raw boneless skinless chicken breasts thoroughly with paper towels (do not wash). Season all sides of the chicken evenly with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp dried oregano.
- 4
Sear the chicken to build a fond: Heat 2 TBSP of extra virgin olive oil in a large, heavy-bottomed skillet over medium-high heat. To ensure proper searing and prevent crowding, cook the chicken in two batches. Add 2 lb of the seasoned chicken breasts to the skillet and sear for 6 to 8 minutes per side, or until the internal temperature reaches 165°F. Remove the cooked chicken to a plate. Add 1 more TBSP of olive oil to the pan and repeat with the remaining 2 lb of chicken. Once cooked, set all chicken aside to rest.
- 5
Sauté the aromatics: Reduce the heat to medium. In the same skillet containing the browned chicken drippings (fond), add the chopped shallots and minced garlic. Sauté for 2 minutes, stirring constantly to prevent burning.
- 6
Blister the tomatoes: Add 2 cups of halved cherry tomatoes and 1 sprig of fresh rosemary to the skillet. Cook for 3 to 4 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.
- 7
Deglaze the pan: Pour in 1/2 cup of dry white wine. Use a wooden spoon to scrape up all the caramelized browned bits (fond) from the bottom of the pan. Simmer for 3 minutes until the liquid reduces by half.
- 8
Build the creamy sauce: Pour in the blended bean puree, the remaining whole cannellini beans, and the remaining 1 cup of low-sodium vegetable broth. Stir well to combine. Simmer gently over medium-low heat for 5 minutes to let the flavors meld and the sauce thicken. Remove and discard the rosemary sprig.
- 9
Fold in the greens and finish: Stir 2 cups of fresh baby spinach into the warm beans and cook for 1 to 2 minutes until just wilted. Turn off the heat, then stir in 1/2 cup of chopped fresh basil leaves and 1 tsp of lemon zest. Season the sauce with additional salt and black pepper to taste.
- 10
Plate and store: Slice 2 lb of the seared chicken breasts. Divide the warm creamy bean and tomato mixture among 4 serving plates, and top each with the sliced chicken. Garnish with the remaining 1/2 cup of fresh basil leaves. Allow the remaining 2 lb of cooked chicken breasts to cool completely, then place them in an airtight container and refrigerate for your Day 3 lunch salad.
