Ingredients
4 oz dry wide rice noodles
10 oz raw large shrimp, peeled and deveined
2 heads baby bok choy
1 large shallot
1 inch piece fresh ginger
3 cloves garlic
2 tbsp thai red curry paste
14 oz canned unsweetened coconut milk
1 cup low-sodium chicken broth
1 tbsp fish sauce
1 tbsp coconut sugar
1 whole lime
1/4 cup fresh cilantro
1 tbsp coconut oil
4 cups water
Instructions
- 1
In a large heatproof bowl, pour 4 cups of boiling water over 4 oz of dry wide rice noodles. Let them soak for 8 to 10 minutes until tender but still slightly firm, then drain and set aside.
- 2
While the noodles soak, prepare your fresh ingredients: peel and mince 1 inch of fresh ginger and 3 cloves of garlic; thinly slice 1 large shallot; wash 2 heads of baby bok choy thoroughly and slice them in half lengthwise; finely chop 1/4 cup of fresh cilantro; grate 1 tsp of zest and squeeze 1 tbsp of juice from 1 whole lime.
- 3
Heat 1 tbsp of coconut oil in a deep skillet or medium Dutch oven over medium heat. Add the sliced shallot, minced ginger, and minced garlic. Sauté for 2 minutes, stirring frequently, until softened and highly fragrant.
- 4
Add 2 tbsp of Thai red curry paste directly to the oil in the center of the pan. Stir-fry the paste constantly for 2 minutes, pressing it into the pan to bloom the spices in the hot oil until it darkens slightly and turns incredibly aromatic.
- 5
Pour in 14 oz of canned unsweetened coconut milk and 1 cup of low-sodium chicken broth. Whisk vigorously to fully dissolve the bloomed curry paste into the liquid, then bring the mixture to a gentle simmer over medium-low heat.
- 6
Stir in 1 tbsp of fish sauce and 1 tbsp of coconut sugar to balance the savory and sweet elements. Add the halved baby bok choy to the simmering broth, cover the pan, and cook for 3 minutes until the bok choy stems begin to soften.
- 7
Gently submerge 10 oz of raw large shrimp into the simmering broth. Cook uncovered for 2 to 3 minutes, turning the shrimp once, just until they turn pink, opaque, and cooked through.
- 8
Remove the skillet from the heat. Stir in 1 tbsp of fresh lime juice and 1 tsp of lime zest to brighten the rich, comforting broth.
- 9
Divide the drained rice noodles between two deep serving bowls. Ladle the hot coconut curry broth, shrimp, and tender bok choy over the noodles. Garnish with 1/4 cup of chopped fresh cilantro and serve immediately.
