Chef's Note

This recipe puts our deconstructed dining blueprint into practice. By serving the complex Thai peanut sauce, the sweet soy glaze, and the fresh toppings in separate dishes, children can enjoy a simple, familiar chicken-and-rice meal, while adults can build a vibrant, complex Thai-inspired grain bowl. It's one meal cooked once, giving everyone autonomy over their plate.

Ingredients
  • 1 1/2 cups Jasmine rice

  • 3 cups Water

  • 1 1/2 lbs Boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 tbsp Olive oil

  • 1/2 tsp Garlic powder

  • 3 cups Broccoli florets

  • 2 large Carrots, peeled into thin ribbons

  • 1/2 cup Creamy peanut butter

  • 6 tbsp Soy sauce (divided)

  • 2 tbsp Lime juice

  • 3 tbsp Honey (divided)

  • 1 tsp Fresh ginger, finely grated

  • 4 tbsp Warm water

  • 1 tsp Sesame oil

  • to taste Crushed peanuts and sesame seeds for garnish

Instructions
  • 1

Rinse the jasmine rice under cold water. Combine the rice, 3 cups of water, and a pinch of salt in a medium saucepan. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes before fluffing with a fork.

  • 2

While the rice cooks, prepare the custom sauces. For the bold 'Thai Peanut Sauce', whisk together the peanut butter, 2 tablespoons of soy sauce, lime juice, 1 tablespoon of honey, grated ginger, and warm water in a small bowl until smooth and pourable. Adjust with more warm water if too thick.

  • 3

For the mild 'Sweet Soy Glaze', whisk together the remaining 4 tablespoons of soy sauce, 2 tablespoons of honey, and sesame oil in a separate small bowl.

  • 4

Toss the diced chicken breast with olive oil, garlic powder, salt, and pepper. Heat a large skillet over medium-high heat and sauté the chicken for 8 to 10 minutes, stirring occasionally, until cooked through and golden brown. Transfer to a dedicated serving bowl.

  • 5

Steam the broccoli florets and carrot ribbons in a steamer basket over boiling water for 4 to 5 minutes until tender-crisp but still vibrantly colored. Place them into separate serving bowls.

  • 6

Arrange the dining table with the individual components: the bowl of jasmine rice (the base), the cooked chicken (the protein), the steamed vegetables, the two custom sauces, and small bowls of crushed peanuts and sesame seeds.

  • 7

Invite each family member to construct their own bowl, choosing their preferred ratio of base, protein, vegetables, and sauce.
