Chef's Note
To keep this recipe under 25 minutes, make sure to lay the chicken thighs completely flat on the sheet pan so they cook through rapidly. Applying the high-sugar BBQ sauce in the final 5 minutes of roasting prevents it from burning while creating a beautifully caramelized glaze!

Ingredients
4 lb boneless skinless chicken thighs
1 lb fresh green beans
2 cup frozen sweet corn
1.5 cup BBQ sauce
1 tsp smoked paprika
1 tsp garlic powder
2 TBSP olive oil
1 tsp salt
1/2 tsp black pepper
Instructions
- 1
Preheat your oven to 425°F (220°C). Line two large baking sheets with aluminum foil for easy cleanup.
- 2
Wash 1 lb of fresh green beans and trim off the stem ends. Pat dry 4 lb of raw boneless skinless chicken thighs with paper towels (do not wash the chicken).
- 3
In a large bowl, toss the trimmed green beans and 2 cups of thawed sweet corn with 2 TBSP of olive oil, 1 tsp of salt, 1/2 tsp of black pepper, 1 tsp of garlic powder, and 1 tsp of smoked paprika until evenly coated.
- 4
Spread the seasoned green beans and corn in a single layer across one side of the sheet pans. Place the 4 lb of chicken thighs on the other side of the sheet pans, ensuring they are laid out flat and not overlapping.
- 5
Roast in the preheated oven for 10 minutes.
- 6
Carefully remove the sheet pans from the oven. Brush 1.5 cups of BBQ sauce generously over both sides of the chicken thighs. Return to the oven and roast for an additional 5 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the BBQ glaze is bubbly and caramelized.
- 7
Let the chicken rest for 2 minutes. Slice 2 lb of the cooked chicken thighs and serve immediately with the roasted green beans and corn.
- 8
Allow the remaining 2 lb of cooked chicken thighs to cool completely, then place them in an airtight container and refrigerate to use for tomorrow's dinner.
