Chef's Note

To make this dish even more fragrant without extra cooking, splash a tiny bit of toasted sesame oil over the bowls right before serving. Be sure to check the ingredient list on your frozen meatballs to ensure they are egg-free!

Ingredients
  • 2 1/2 cups dry instant brown rice

  • 24 oz frozen turkey meatballs

  • 4 cups frozen broccoli florets

  • 4 TBSP soy sauce

  • 1 1/2 tsp garlic powder

Instructions
  • 1

In a large microwave-safe bowl, combine 2 1/2 cups dry instant brown rice and 2 1/2 cups water.

  • 2

Cover the bowl with a microwave-safe plate or vented plastic wrap, and microwave on high for 5 minutes, or until the water is completely absorbed. Let it stand covered for 2 minutes to finish steaming.

  • 3

In a separate large microwave-safe bowl, combine 24 oz frozen turkey meatballs and 4 cups frozen broccoli florets. Add 2 tablespoons of water to help steam, then cover with a plate.

  • 4

Microwave the meatballs and broccoli on high for 5 minutes, stirring halfway through, until the meatballs are hot throughout and the broccoli is tender. Carefully drain any excess water from the bowl.

  • 5

In a small cup, stir together 4 tablespoons of soy sauce and 1 1/2 teaspoons of garlic powder until fully dissolved.

  • 6

Pour the soy-garlic mixture over the hot meatballs and broccoli, tossing gently to coat them evenly.

  • 7

Divide the cooked brown rice between two serving bowls, top with the seasoned soy-garlic turkey meatballs and broccoli, and serve immediately.
