Chef's Note
To make peeling your leftover eggs even easier, roll them gently on the counter after tapping to crack the shell all over. This helps separate the membrane from the egg white so the shell slips off in large pieces!

Ingredients
2 whole leftover hard-boiled eggs
1/4 cup plain nonfat Greek yogurt
1 small banana
1/4 tsp sea salt
1/8 tsp black pepper
Instructions
- 1
Retrieve the 2 remaining leftover unpeeled hard-boiled eggs from the refrigerator, which were prepared and stored during the Day 1 meal prep session.
- 2
Gently tap the eggs on a hard flat surface to crack the shells, then carefully peel them under a thin stream of cool running water to help the shells slide off smoothly.
- 3
Slice the 2 peeled eggs in half lengthwise and arrange them neatly on a clean serving plate.
- 4
Season the egg halves evenly with 1/4 tsp of sea salt and 1/8 tsp of black pepper.
- 5
Spoon 1/4 cup of plain nonfat Greek yogurt onto the side of the plate.
- 6
Peel 1 small banana and place it next to the eggs and yogurt. Serve immediately while the eggs are still pleasantly chilled.
