Chef's Note

Searing the sirloin in batches is crucial here! If you crowd the pot, the meat will steam in its own juices instead of developing that gorgeous, deep brown crust. That caramelized fond left behind in the pot is the secret to getting an ultra-rich, slow-cooked broth flavor in under an hour.

Ingredients
  • 1.25 pounds raw sirloin steak, trimmed of excess fat

  • 1/2 cup uncooked pearl barley

  • 1 medium raw yellow onion

  • 2 medium raw carrots

  • 1 large raw parsnip

  • 2 stalks raw celery stalks

  • 4 cloves raw garlic cloves

  • 2 tablespoons tomato paste

  • 1/2 cup dry red wine

  • 4 cups beef bone broth

  • 4 sprigs fresh thyme sprigs

  • 1 sprig fresh rosemary sprig

  • 1 tablespoon Worcestershire sauce

  • 1 small loaf unsliced French baguette

  • 4 ounces Gruyère cheese block

Instructions
  • 1

Prepare the fresh ingredients: Cut the 1.25 pounds of raw sirloin steak into 1-inch cubes, pat dry with paper towels, and season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Peel and chop the 1 yellow onion, 2 carrots, and 1 parsnip into 1/2-inch pieces. Slice the 2 celery stalks into 1/2-inch pieces. Mince the 4 garlic cloves. Grate the 4 ounces of Gruyère cheese and slice the French baguette into 1/2-inch thick rounds.

  • 2

Heat 1 tablespoon of olive oil in a large Dutch oven over medium-high heat. Working in batches to avoid crowding the pan, add the cubed sirloin and sear until a deep brown crust forms on all sides, about 3 to 4 minutes per batch. Transfer the seared beef to a plate, leaving the drippings and browned bits (fond) in the pot.

  • 3

Reduce the heat to medium and add another 1 tablespoon of olive oil to the Dutch oven. Add the chopped onion, carrots, parsnip, and celery. Cook, stirring occasionally, for 6 to 8 minutes until the vegetables begin to soften and develop lightly caramelized edges, scraping up the beef bits from the bottom of the pot.

  • 4

Stir in the minced garlic and 2 tablespoons of tomato paste. Cook for 2 minutes, stirring constantly, until the tomato paste darkens to a brick-red color and releases a rich, sweet aroma.

  • 5

Pour in the 1/2 cup of dry red wine to deglaze the pot. Use a wooden spoon to vigorously scrape up all the caramelized fond stuck to the bottom. Simmer for 2 to 3 minutes until the wine has reduced by half.

  • 6

Return the seared sirloin and any accumulated juices to the pot. Add the 1/2 cup of uncooked pearl barley, 4 cups of beef bone broth, 1 tablespoon of Worcestershire sauce, 4 fresh thyme sprigs, and 1 fresh rosemary sprig. Bring the mixture to a boil over high heat.

  • 7

Reduce the heat to low, cover the Dutch oven with a tight-fitting lid, and simmer gently for 35 minutes, stirring occasionally, until the barley is tender and the stew has thickened. Remove and discard the herb sprigs, then season the stew with salt and black pepper to taste.

  • 8

While the stew finishes simmering, preheat the oven's broiler to high. Arrange the sliced baguette rounds on a baking sheet and broil for 1 to 2 minutes until lightly toasted. Flip the slices over, top them evenly with the grated Gruyère cheese, and broil for another 2 to 3 minutes until the cheese is melted, bubbling, and golden brown.

  • 9

Ladle the hot sirloin and barley stew into warm bowls. Top each serving with two of the hot, cheesy Gruyère toasts and serve immediately.
