Chef's Note
To get the ultimate crispy edges on your fingerling potatoes, place them cut-side down on the sheet pan before roasting. This maximizes contact with the hot metal for beautiful caramelization!

Ingredients
3 lb boneless skinless chicken thighs
1 lb fingerling potatoes
2 medium zucchini
2 whole lemons
4 cloves garlic
2 whole shallots
1 tbsp dried oregano
1 tsp paprika
1 tbsp Dijon mustard
1 tbsp fresh oregano
1 tsp fresh rosemary
4 oz feta cheese
Instructions
- 1
Preheat your oven to 425 degrees F (218 degrees C). Wash the fingerling potatoes and zucchini. Cut 1 lb of fingerling potatoes in half lengthwise. Slice 2 medium zucchini into 1/2-inch thick rounds. Peel 2 shallots and cut them into quarters.
- 2
In a small bowl, whisk together 3 tbsp of olive oil, the zest and juice of 1 lemon (about 3 tbsp), 1 tbsp of Dijon mustard, 4 minced garlic cloves, 1 tbsp of dried oregano, 1 tsp of paprika, 1 tsp of kosher salt, and 1/2 tsp of black pepper to create the marinade.
- 3
Pat dry 3 lbs of boneless skinless chicken thighs with paper towels (do not wash them). Place the chicken thighs in a large bowl and toss with half of the prepared marinade. In a separate bowl, toss the halved fingerling potatoes and quartered shallots with the remaining half of the marinade.
- 4
Arrange the marinated chicken thighs and the potatoes and shallots in a single layer on a large rimmed baking sheet, ensuring the chicken thighs are spread out to maximize surface contact and browning. Roast in the preheated oven for 15 minutes.
- 5
While the chicken and potatoes are roasting, toss the sliced zucchini rounds with 1 tbsp of olive oil, 1/2 tsp of kosher salt, and 1/4 tsp of black pepper. Slice the remaining lemon into thin rounds.
- 6
Carefully remove the baking sheet from the oven. Scatter the seasoned zucchini rounds and lemon slices evenly around the chicken and potatoes. Return the sheet pan to the oven and roast for an additional 12 minutes, until the chicken reaches an internal temperature of 165 degrees F (74 degrees C) and the potatoes are tender and golden brown.
- 7
Remove from the oven. Finely chop 1 tbsp of fresh oregano and 1 tsp of fresh rosemary, then scatter them over the sheet pan. Crumble 4 oz of feta cheese over the top and let the dish rest for 3 minutes.
- 8
Transfer exactly half of the cooked chicken thighs (1.5 lbs) to an airtight container, let cool slightly, and store in the refrigerator to reserve for Day 3. Serve the remaining chicken thighs, roasted potatoes, zucchini, and shallots immediately.
