Ingredients
  • 2 cans (5 oz each) canned albacore tuna in water

  • 1.5 tbsp mayonnaise

  • 110 g whole grain crackers

  • 1 medium Gala apple

  • 2 stalks celery stalks

  • 1 medium lemon

  • 4 cups mixed salad greens

  • 1 cup cherry tomatoes

  • 1/2 cucumber English cucumber

  • 1/2 tbsp extra virgin olive oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

Instructions
  • 1

Thoroughly wash the fresh produce: 2 celery stalks, 1 Gala apple, 1 lemon, 4 cups mixed salad greens, 1 cup cherry tomatoes, and 1/2 English cucumber.

  • 2

Finely dice the 2 celery stalks. Core and finely dice the 1 Gala apple, keeping half reserved for the salad and half for the tuna mixture.

  • 3

Slice the 1 cup cherry tomatoes in half and slice the 1/2 English cucumber into thin half-moons.

  • 4

Grate the lemon to obtain 1 tsp of zest, then cut the lemon in half and squeeze to yield 2 tbsp of fresh lemon juice.

  • 5

Open the 2 cans of albacore tuna and drain the water completely. Transfer the tuna to a medium mixing bowl and flake it into small pieces using a fork.

  • 6

To the tuna bowl, add 1.5 tbsp mayonnaise, 1 tsp lemon zest, 1 tbsp of the fresh lemon juice, the diced celery, and half of the diced Gala apple. Season with 1/4 tsp salt and 1/4 tsp black pepper, then stir until creamy and thoroughly combined.

  • 7

In a separate large bowl, combine the 4 cups mixed salad greens, halved cherry tomatoes, sliced cucumber, and the remaining half of the diced Gala apple.

  • 8

Drizzle the salad with 1/2 tbsp extra virgin olive oil, the remaining 1 tbsp lemon juice, and season with 1/4 tsp salt and 1/4 tsp black pepper. Toss gently to evenly coat the greens.

  • 9

Divide 110g whole grain crackers evenly between two serving plates. Scoop the tuna salad alongside the crackers and serve immediately with the prepared side salad.
