Chef's Note

To make this snack even more portable, mix the almond butter dip in a small jar ahead of time. Keep the apple slices crisp by tossing them in the lemon water, drying them well, and packing them in an airtight container with a damp paper towel.

Ingredients
  • 3 medium apples

  • 1/2 whole lemon

  • 200 g plain nonfat Greek yogurt

  • 4 TBSP creamy almond butter

  • 44 g vanilla whey protein powder

  • 2 TBSP honey

  • 1/2 tsp ground cinnamon

  • 2 tsp chia seeds

Instructions
  • 1

Fill a medium bowl with cold water and squeeze the juice of 1/2 lemon into it.

  • 2

Wash 3 medium apples, cut them in half, remove the cores, and slice them into thin, even wedges.

  • 3

Place the apple slices into the lemon water for 1 minute to prevent browning, then drain them thoroughly and pat completely dry with a clean kitchen towel.

  • 4

In a separate mixing bowl, combine 200g plain nonfat Greek yogurt, 4 tbsp creamy almond butter, 44g vanilla whey protein powder, 2 tbsp honey, and 1/2 tsp ground cinnamon.

  • 5

Whisk the mixture vigorously using a fork or small whisk until it is completely smooth, creamy, and uniform in texture. If the mixture is too thick, whisk in 1 teaspoon of water at a time until you reach a smooth, dippable consistency.

  • 6

Divide the high-protein almond butter dip evenly into two serving bowls and sprinkle 1 tsp of chia seeds over each portion.

  • 7

Arrange the dried apple slices around the dipping bowls and serve immediately.
