Ingredients
2 cups plain Greek yogurt
1 tsp vanilla extract
3 tbsp honey
2 medium bananas
1/2 cup rolled oats
1/4 cup sliced almonds
1/4 tsp ground cinnamon
Instructions
- 1
Place a small dry skillet over medium heat. Add 1/2 cup rolled oats and 1/4 cup sliced almonds. Toast for 3 to 4 minutes, stirring constantly, until fragrant and golden brown.
- 2
Sprinkle 1/4 tsp ground cinnamon over the toasted oat mixture, stir for 10 seconds to release the aroma, then remove the skillet from the heat and let the mixture cool completely.
- 3
In a medium bowl, combine 2 cups plain Greek yogurt, 1 tsp vanilla extract, and 1 tbsp honey. Whisk until smooth and thoroughly combined to create your vanilla yogurt base.
- 4
Peel 2 medium bananas and slice them crosswise into 1/4-inch thick rounds.
- 5
Assemble the parfaits by taking 3 clean glasses or jars. Spoon 2 tbsp of the prepared vanilla yogurt into the bottom of each glass.
- 6
Add a layer of sliced bananas (about 4 to 5 slices per glass) on top of the yogurt, followed by 1 tbsp of the cooled toasted oat and almond mixture.
- 7
Repeat the layers, dividing the remaining vanilla yogurt, sliced bananas, and toasted oat mixture equally among the 3 glasses.
- 8
Drizzle the remaining 2 tbsp of honey evenly over the tops of the three parfaits right before serving for a beautiful glossy finish.
