Chef's Note
Air-frying uncooked shelf-stable gnocchi is a game-changer! They get incredibly crispy on the outside while remaining soft and pillowy on the inside, making them a perfect, healthier alternative to traditional tater tots that kids will love dipping in extra BBQ sauce.

Ingredients
4 links raw mild Italian sausage links
1 large red bell pepper
1 large yellow bell pepper
1 medium red onion
16 oz shelf-stable potato gnocchi
1/2 cup grated parmesan cheese
1 tsp garlic powder
1 tsp dried oregano
1/2 cup mild BBQ sauce
3 TBSP olive oil
1 tsp salt
3/4 tsp black pepper
to taste spray cooking spray
Instructions
- 1
Soak 8 wooden skewers in water for 15 minutes to prevent them from burning on the grill.
- 2
Preheat your outdoor BBQ grill to medium-high heat (about 400°F / 204°C). Simultaneously, preheat your air fryer to 390°F (199°C).
- 3
Wash 1 large red bell pepper and 1 large yellow bell pepper, remove the seeds, and cut them into 1-inch chunks. Peel 1 medium red onion and cut it into 1-inch chunks.
- 4
Slice 4 raw mild Italian sausage links into 1-inch thick round coins.
- 5
Thread the sausage slices, red bell pepper, yellow bell pepper, and red onion pieces alternately onto the soaked wooden skewers. Brush the skewers with 2 TBSP of olive oil and season evenly with 1/2 tsp of salt and 1/2 tsp of black pepper.
- 6
In a medium bowl, toss 16 oz of shelf-stable potato gnocchi with 1 TBSP of olive oil, 1/2 cup of grated parmesan cheese, 1 tsp of garlic powder, 1 tsp of dried oregano, 1/2 tsp of salt, and 1/4 tsp of black pepper until the gnocchi are evenly coated.
- 7
Lightly spray the air fryer basket with cooking spray. Add the seasoned gnocchi in a single, even layer. Air-fry at 390°F (199°C) for 15 to 18 minutes, shaking the basket every 5 minutes, until they are crispy and golden brown on the outside.
- 8
While the gnocchi are air-frying, place the sausage and pepper skewers on the preheated BBQ grill. Grill for 10 to 12 minutes, turning every 3 minutes, until the sausage is cooked through and the vegetables are tender.
- 9
During the final 3 minutes of grilling, brush 1/2 cup of mild BBQ sauce generously over all sides of the skewers, turning them once to let the sauce caramelize slightly without burning.
- 10
Remove the skewers and crispy gnocchi from heat. Serve the skewers hot alongside the crispy air-fried gnocchi 'tots' for a fun, kid-friendly meal.
