Chef's Note

Toasting the raw almonds yourself brings out their natural oils and creates a much richer, nuttier flavor than store-bought pre-roasted ones. Keep a close eye on them in the pan, as they can go from perfectly toasted to burnt very quickly!

Ingredients
  • 1 medium raw cantaloupe

  • 1.5 cups raw whole almonds

  • 1 whole raw lime

  • 1/2 tsp sea salt

  • 1 tbsp raw honey

Instructions
  • 1

Place 1.5 cups of raw whole almonds in a dry skillet over medium heat. Toast them, stirring constantly, for 4 to 5 minutes until they are fragrant and slightly darkened. Remove from heat immediately and transfer to a plate to cool completely.

  • 2

Once the toasted almonds are cool to the touch, roughly chop them using a chef's knife.

  • 3

Cut 1 medium raw cantaloupe in half. Use a spoon to scoop out and discard the seeds and pulp from the center.

  • 4

Slice the cantaloupe halves into wedges, peel off the outer skin using a sharp knife, and chop the flesh into bite-sized 1-inch cubes. Place the cubes into a large mixing bowl.

  • 5

Wash 1 raw lime, then grate its skin to yield about 1/2 tsp of zest, and squeeze out 1 tbsp of fresh lime juice.

  • 6

Drizzle the 1 tbsp of fresh lime juice and 1 tbsp of raw honey over the cantaloupe cubes, and toss gently to coat.

  • 7

Divide the cantaloupe cubes into 6 serving bowls. Top each bowl with the chopped toasted almonds, sprinkle with 1/2 tsp of sea salt, and garnish with the lime zest.
