Chef's Note
English cucumbers are perfect for this snack because their thin skins don't require peeling and they have fewer seeds, making them extra sturdy for scooping up the rich, creamy guacamole!

Ingredients
2 large English cucumbers
3 medium Avocados
1 medium Lime
1/4 cup Red onion
1/4 cup Fresh cilantro
1/2 tsp Salt
1/4 tsp Black pepper
Instructions
- 1
Wash 2 large English cucumbers thoroughly under cold running water. Slice them into 1/4-inch thick rounds, then set the slices aside on a serving platter.
- 2
Slice 3 medium avocados in half, remove the pits, and scoop the green flesh into a medium mixing bowl.
- 3
Cut 1 medium lime in half and squeeze its juice (about 1 to 2 tablespoons) directly over the scooped avocados to keep them bright green.
- 4
Use a sturdy fork to mash the avocados to your preferred consistency, leaving it slightly chunky or mashing until smooth.
- 5
Finely dice enough red onion to yield 1/4 cup, and finely chop 1/4 cup of fresh cilantro sprigs.
- 6
Add the 1/4 cup of diced red onion, 1/4 cup of chopped cilantro, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the mashed avocado.
- 7
Stir the guacamole mixture thoroughly to combine all the flavors.
- 8
Serve the crisp cucumber slices immediately alongside the fresh guacamole for dipping, or spoon a small dollop of guacamole onto each individual cucumber round.
