Chef's Note

These energy bites are perfect for batch prepping! Make a full week's worth (35 bites total) on meal prep day and store them in an airtight container in the fridge. They actually taste better after sitting for a day as the flavors meld together. You can also swap the chocolate chips for dried cranberries or chopped almonds for variety.

Ingredients
  • 3 TBSP old-fashioned rolled oats

  • 20 g vanilla whey protein powder

  • 1 TBSP natural peanut butter

  • 2 tsp honey

  • 1 TBSP unsweetened shredded coconut

  • 1 TBSP mini dark chocolate chips

  • 1/4 tsp vanilla extract

  • 1-2 TBSP unsweetened almond milk

Instructions
  • 1

In a medium mixing bowl, combine 3 TBSP of old-fashioned rolled oats, 20 g of vanilla whey protein powder, and 1 TBSP of unsweetened shredded coconut. Stir the dry ingredients together until evenly distributed.

  • 2

Add 1 TBSP of natural peanut butter and 2 tsp of honey to the bowl. Using a sturdy spoon or your clean hands, work the wet ingredients into the dry mixture until it begins to clump together.

  • 3

Add 1/4 tsp of vanilla extract and 1 TBSP of mini dark chocolate chips to the mixture. Stir to distribute the chocolate chips evenly throughout.

  • 4

Add 1 TBSP of unsweetened almond milk to the mixture and knead with your hands until the mixture holds together when pressed. If the mixture is too dry and crumbly, add an additional 1 TBSP of almond milk, a little at a time, until the mixture is sticky enough to form balls but not wet.

  • 5

Divide the mixture into 5 equal portions. Roll each portion between your palms to form smooth, compact balls about 1 inch in diameter.

  • 6

Place the energy bites on a small plate or in an airtight container. Refrigerate for at least 30 minutes to firm up before eating. The bites can be stored in the refrigerator for up to 5 days.

  • 7

When ready to eat your snack, remove 5 energy bites from the refrigerator and enjoy at room temperature or chilled.
