Chef's Note
To make this snack even quicker for busy weekdays, you can toast a large batch of pumpkin seeds ahead of time and store them in an airtight pantry container. The contrast of warm toasted seeds against cold juicy mango is incredible!

Ingredients
3 pieces raw whole mangoes
1/2 cup raw pumpkin seeds
1 piece lime
1.5 tablespoons Tajin seasoning
Instructions
- 1
Place 1/2 cup raw pumpkin seeds in a dry skillet over medium heat. Toast for 3 to 4 minutes, stirring constantly, until they are fragrant and lightly golden. Remove from heat and set aside to cool.
- 2
Wash 3 raw whole mangoes. Stand one mango upright on a cutting board and slice off the sides (cheeks) as close to the flat central pit as possible. Repeat for all mangoes.
- 3
Score the flesh of each mango cheek in a crosshatch pattern down to the skin, then use a spoon to scoop the mango cubes away from the skin. Peel and slice any remaining flesh from around the pits.
- 4
Divide the fresh mango slices evenly among 6 serving plates or meal-prep containers.
- 5
Cut 1 lime in half and squeeze the fresh juice evenly over the mango slices.
- 6
Sprinkle 1.5 tablespoons of Tajin seasoning evenly across the lime-splashed mango slices.
- 7
Garnish each serving with the cooled, toasted pumpkin seeds and serve immediately.
