Chef's Note

To keep the mango toppings tasting incredibly fresh, store them in a separate small container and add them right before you eat each morning. If the oats are too thick after soaking, stir in an extra splash of almond milk to loosen them up.

Ingredients
  • 2 cups rolled oats

  • 3 tbsp chia seeds

  • 2 cups light coconut milk

  • 1.5 cups unsweetened almond milk

  • 2 whole fresh mango

  • 2 tbsp maple syrup

  • 1 tsp vanilla extract

Instructions
  • 1

Peel the 2 whole fresh mangos, slice the flesh away from the pits, and dice into small 1/2-inch cubes.

  • 2

In a large meal prep container, combine 2 cups of rolled oats, 3 tbsp of chia seeds, and a pinch of salt, stirring to distribute the seeds.

  • 3

Pour in 2 cups of light coconut milk, 1.5 cups of unsweetened almond milk, 2 tbsp of maple syrup, and 1 tsp of vanilla extract. Whisk thoroughly to ensure the chia seeds do not clump.

  • 4

Gently fold in half of the diced mango cubes into the oat mixture, reserving the other half in a separate airtight container in the fridge for topping.

  • 5

Cover the oat container tightly and place in the refrigerator to soak passively for at least 6 hours, or overnight, until thickened.

  • 6

Stir the overnight oats well before serving. Divide into 6 equal portions and top each with the reserved fresh diced mango.
