Chef's Note
For the best texture, use pears that are slightly firm; if they are too ripe, they will turn into sauce rather than holding their shape during the sauté.

Ingredients
2 large Pears
1/2 cup Old-fashioned rolled oats
3 tbsp Unsalted butter
2 tbsp Light brown sugar
1 tsp Ground cinnamon
1/2 tsp Vanilla extract
Instructions
- 1
Wash 2 large pears, peel them with a vegetable peeler, and cut them into 1/2-inch dice, discarding the cores.
- 2
In a small skillet over medium heat, melt 1 tbsp unsalted butter. Add 1/2 cup old-fashioned rolled oats.
- 3
Cook the oats for 4-5 minutes, stirring frequently with a heat-proof spatula, until they smell nutty and turn golden brown. Remove the toasted oats from the pan and set aside in a small bowl.
- 4
In a larger skillet over medium heat, melt the remaining 2 tbsp unsalted butter. Add the diced pears to the pan.
- 5
Sauté the pears for about 5 minutes, stirring occasionally, until they begin to soften and turn translucent at the edges.
- 6
Sprinkle 2 tbsp light brown sugar, 1 tsp ground cinnamon, and 1/2 tsp vanilla extract over the pears and stir well to coat.
- 7
Continue cooking for another 3-4 minutes until the sugar melts into a thick, bubbly syrup and the pears are tender when pierced with a fork.
- 8
Divide the warm sautéed pear mixture evenly into two serving bowls. Top each bowl with the reserved toasted oats and serve immediately.
